Spicy Lentil Soup
(Makes 12 1-cup servings)
Preparation -
Heat a medium stock-pot over medium-high heat. Add the olive oil to lightly coat the bottom of the pan. Add the onion, carrot, celery, and garlic. Cook until the onion has softened, about 2 minutes.
Stir in the lentils, tomatoes, stock, bay leaf, cayenne, chili powder, cumin, paprika, basil, salt, and pepper. Bring to a boil, reduce heat, and simmer until the lentils have softened, about 20 minutes. Remove the bay leaf before serving. Add ¼ cup chopped avocado to each serving.

How much water do you add to create the vegetable stock? I have a stock recipe that includes all of the vegetables in this recipe, except the stewed tomatoes, and it calls for 2 quarts of water (yield 6 cups).

It looks like you must use 8 cups of water if you are getting 8 cups of stock.
I do not see a stock recipe. what do you do?
